When did you first take an interest in cooking, and when did you decide you wanted to become a chef?

I’ve been interested in cooking since I was a child. My father and my grandparents are all really into their cooking, so I was exposed to the art from a young age. My grandparents were very traditional in their approach, where as my dad is one of those guys who will try anything once – whether it is an exotic dish or a new, experimental way preparing something.

Where did you do your training?

I did my training in catering at Swindon College, where I was for three years. It was funny, I sort of fell into a career as a chef. My friends and I were sitting around at school, wondering what to do with our lives, when one of them told us he’d be joining the RAF as a caterer. We all thought that it sounded like a pretty good idea and went and signed up at the local college! I’ve never looked back.

How would you describe the style of food served in your restaurant?

We combine traditional pub values with premium food and drink. We serve the finest dishes, using the best quality ingredients.

What would you order from your own menu?

Definitely the rib-eye steak. It is a great quality steak, one of the best ones out there and I can assure you, it is cooked to perfection! That or the combo platter - it goes down a treat with our customers.

Your favourite vegetable, and why?

The humble Brussels sprout. It has such a bad reputation, but I think they’re delicious. Personally, I like to brown them in a frying pan and then put some water in, whack on the top and let them steam. But my dad shreds them like cabbage and serves them up seasoned, with bacon. Both ways are delicious!

And favourite dessert?

Homemade ice cream. One of my favourite things about going on holiday is finding the local homemade ice cream shop and coming back everyday to try the huge range of flavours.

Do you cook a lot at home? What sort of food?

I don’t really cook at home. It sounds terrible and always leaves my friends either laughing or incredulous, but I don’t have much time at home during meal times because of the shifts I work.

When I do though, I like to keep it simple. Being surrounded by so many rich combinations of flavours all day leaves you craving comfort dishes.

Where else locally do you like to eat?

We’ve got a delicious little tapas place round the corner and a great French bistro, they’re authentic and you really feel like you could be somewhere else.
