Made By Bob’s Sam Edwards Mouth Vibes – Caponata (Serves 4)

Method and ingredients

Two aubergines: Fried until golden. Pat down and apply salt before cooking to remove a lot of the access water.

A Pinch of pine nuts: Dry fry them to toast them off.

A small handful of green olives - quartered.

Four sticks of celery, diced and sautéed, perhaps do this with the aubergines.

Combine all of the above ingredients with half a jar (250ml) of Made By Bob tomato sauce. Be careful not to mash up the aubergines, you want to keep them whole and visible throughout the mix.

Season and fold through chopped basil.

This is an excellent accompaniment to chicken or we have served it recently in the restaurant with a piece of pan fried stone bass.
