Something fishy with Simon Rhodes from Lobsterpot Fishmongers, Wood Street Food Hall

THIS week I thought I would talk about a project designed to get more people to eat more fish more often.

This project, based in Scotland, is called Fish Is The Dish. If you are a regular customer of The Lobster Pot you will have seen some of the posters around the shop. They are part of Seafish, a non-departmental Government body which provides a wide range of services to the fishing industry, including training, legislation, boat surveying and sea/ocean mapping.

They are passionate, like me, in getting people especially our li’l ones, to eat more fish.

They have a fantastic website which is fun and extremely informative (fishisthedish.co.uk). They have great recipes, stories, competitions, games, and an education as well as a ‘how to’ section which, for example, shows you how to fillet, prepare, cook and serve different types of fish.

Looking through the website I thought I might share with you a great looking fish recipe which is designed to be a quick and easy light meal.

Cod-tastic Burger (serves 4) You will need; 2 cod fillets or any other white fish like coley, pollock, haddock, hake or whiting, 2 tbsp red curry paste, 2 tbsp coriander, chopped, 1 tbsp brown sugar, 2 dashes of lime juice, 2 dashes of fish sauce, 4 spring onions, finely sliced, salad to serve.

Mince the fish in a food processor with the curry paste, coriander, brown sugar, lime juice and fish sauce.

Spoon into a bowl, season with salt and pepper and mix in the spring onions.

Divide the mixture into four and shape the burgers by rolling the mixture into a ball before flattening between your hands. For best results refrigerate the uncooked burgers for two hours.

When you are ready to cook your burgers, grill them at a fairly high heat or barbecue them (for about three mins each side), or pan fry on a medium heat for a couple of minutes on each side, so that the burgers take on a bit of colour and are cooked through.

Serve on a toasted burger bun with salad and perhaps even a spoonful of yoghurt.
