LAST week a customer came into the shop and browsed at the fish counter. She was looking for inspiration for a simple fish supper.

I went through our selection of fresh fish and came to the halibut. I explained to her that although it was a boneless fillet it was a popular restaurant fish that came at a price. She didn’t want to pay too much, however, she had never had halibut before.

I wanted to share my passion and enthusiasm for fish with her so I cooked a piece for her to try. Liking the taste she decided to go for it, and on request I gave her cooking instructions.

The next day she phoned the shop and said it was one of the best meals she had ever had and she was very glad she chose to have the halibut.

In our shop we take our passion and enthusiasm for good food for granted and when feedback like this comes our way it makes us realise that not only do we have great fresh produce but we have a sort of ‘foodie’ club amongst our customers who aren’ot afraid to try new things and give us feedback.

I have had many jobs in the past and nothing gives me more pleasure than sharing food experiences with people, it and makes my job pleasurable. After all they say that if your job is your passion then you are a happy bunny... or something like that!.

For those of you who are unaware of the delights of halibut it is a firm meaty fish with a taste to die for. I have to say it is my favourite fish and would choose it without hesitation should it appear on any menu.

It is very easy to cook and does not need any complicated sauce or technique to bring out its superior quality.

It can be smoked, poached, steamed, grilled or pan-roasted and the flavour will hold up.

The halibut loves cold water and the UK supply comes mainly from as far as Greenland, and, closer to home, the Faroe Islands. Once caught the halibut can stay fresh in the right conditions for up to 14 days – a bit like me really!

So if you fancy something a little different from the norm why not give halibut a go – I promise you will not be disappointed.
