REMEMBER this is a yummy treat and not to be considered as part of your new healthy eating plan!
- Turn oven to 170C (160C fan).
- Place chocolate and butter in a bowl and melt over simmering water in a pot making sure the water does not touch the bowl.
- While you are waiting for the chocolate and butter to melt, whisk the eggs and sugar together. In order to get a truly chewy brownie you must really go to town on the sugar and eggs — literally 8-10 in a kitchen aid is just enough.
- Sieve the cocoa, xanthum gum, and flour together.
- Fold the melted chocolate and butter into the cocoa mix, and then gently fold the egg and sugar mix into the mix as well.
- Place in a greased tin (or you could use baking parchment) and place in the oven for 40-50 minutes, or until just cooked. Allow to cool.
- For the ganache: melt the cream, butter and milk chocolate together as before, spread over the cooled brownie, melt the white chocolate separately and feather into the ganache mix.
