A PASTRY masterclass with a rising star in the kitchen paid off for guests of Swindon College.

The college hosted a pudding tasting indulgence evening in their restaurant for 42 customers who were able to sample a seven course menu of delicious puddings produced by level 3 patisserie and confectionery full time students and apprentices.

The evening was put on after chef lecturer Paul Kelly won a competition which landed him with the chance to work with one of the next big names in the kitchen.

At just 21 years old, Thomas Leatherbarrow has been cooking up a storm in the kitchen by establishing his own pastry chef business, having earned his stripes working under the likes of Jason Atherton and Tom Aikens.

Thomas has just recently won the Callebaut's For The Love of Chocolate Competition, and after working in Michelin star kitchens he now has developed his own style to create deserts that are simple but executed well.

He returned to the college to oversee the creation of the dishes alongside Mr Kelly, with mouth-watering treats including chocolate and liquorice mouse and sticky toffee pudding.

Sian Vockins, curriculum area manager for hospitality said: "What a night that was! Phenomenal food and superb service. Seeing the end result and the delight on our guests faces made all the preparation and hard work from our students and chefs worthwhile."
