Pea And Ham Bruschetta

Ingredients:

100g peas (defrosted) One clove of garlic Finely grated Parmesan (use a block of aged Reggiano, not packet grated version) Tarragon leaves Bread of your choice, grilled or toasted Salad leaves Aged balsamic vinegar Good quality extra virgin olive oil and salt and pepper to taste

Method:

Using a pestle and mortar crush your garlic, with salt, into a puree.

Add the peas into the pestle and mortar and crush into a pulp. If you do not have a big enough pestle and mortar use a food processor but try and keep the mixture course.

Add the oil until the mixture becomes spreadable. Place on the warm toast or grilled bread, add salad leaves and drizzle over a little of the balsamic, the olive oil and season. My tip would be to use the pea mixture as a burger topping — or to use it as a pasta sauce simply add more oil, a tablespoon of Ricotta cheese and a squeeze of lemon juice.
