When did you first take an interest in cooking, and when did you decide you wanted to become a chef?

I first took an interest in cooking at school and got a job in a hotel in my home town of Stow On The Wold, starting as soon as I finished school. It went from there.

Where did you do your training?

My training was done at that hotel, The Old Stocks and day release at Cheltenham College.

How would you describe the style of food served in your restaurant?

The style of food we do is mainly classic British, with the odd twist thrown in.

Do you have a signature dish? If so, what?

My signature dish is pork fillet stuffed with pate and wrapped in parma ham, served with dauphinoise potatoes and fresh vegetables. That, or pork medallions in a pepper sauce, with saute potatoes and vegetables.

What would you order from your own menu?

My choice off the menu would be the sizzling chicken.

Your favourite vegetable, and why?

My favourite vegetable is is the potato because it is so versatile – there is so much that can be done with it.

And favourite dessert?

It would have to be banoffee pie – I just love it!!

Do you cook a lot at home? What sort of food?

I don’t really get to cook a lot at home but when I do its mostly roasts, as my children love their roast dinner.

Where else locally do you like to eat?

I dont go out to eat often, but when I do I like to try a place I haven’t been to before.

Why should people come to Cross Keys?

Because it’s a very welcoming and friendly pub with great fresh, homecooked food.
