When did you first take an interest in cooking, and when did you decide you wanted to become a chef?

I first started cooking as a hobby at home when I was about 15 in Italy. I enjoyed cooking for my family and it went on from there.

Where did you do your training?

Over the years I worked and trained in restaurants and worked my way up to where I am today.

How would you describe the style of food served in your restaurant?

The Red Lion offers good home-cooked food, ranging from soup and sandwiches to sirloin steak with all the trimmings.

Do you have a signature dish? If so, what?

I don't really have a signature dish but my chicken breast stuffed with cream cheese and spinach, wrapped in bacon with a white wine sauce, is very popular.

What would you order from your own menu?

Anything, it’s all good!

Your favourite vegetable, and why?

I love all vegetables.

And favourite dessert?

My favourite dessert was chocolate fudge cake, but I’m now diabetic so it’s a fresh fruit salad.

Do you cook a lot at home? What sort of food?

Yes, I cook everyday for my family. Mainly Italian.

Where else locally do you like to eat?

I don’t really eat out. Why go out when I can cook it myself!
