How to make... Bubble and Squeak

Peel and wash potatoes and boil for mash, when potatoes are almost ready for mashing, chop the first lot of vegetables nice and thin and steam for a few minutes in boiling water or even some of the potato water, to soften.

Once this is done set veg aside, strain potatoes and mash. Then mix together for stir frying.

In a hot frying pan, add a glug of olive oil and nice knob of butter, then cook up your bubble & squeak, let it crisp in pan, best left alone for a while to achieve this, season well.

Place bubble & squeak on plate and be prepared to be amazed! Enjoy!!
