SO this is rather easy!
If like us you are prone to having bananas over ripening (particularly now we have our little Chop House in Wood Street selling banana shakes) then the only really good thing to do is throw them in a bowl, smash ’em up and make a banana loaf.
It’s great with cream or creme fraiche, hot with custard or just as it is!
140g butter 140g caster sugar 2 large eggs 140g self raising flour 1tsp baking powder 2 smashed-up over-ripe bananas l Cream together your butter and caster sugar till fluffy.
- Add eggs one at a time
- Slowly add sieved flour and baking powder l Fold in the smashed-up bananas
- Throw the mix into a greased loaf tin l Bake at 180C for around 30-40 mins. Cool and EAT!
