Peel and cut the potatoes to a similar size, then leave in cold water for 20 minutes. Bring a pan of unsalted water to boil and then fire in the potatoes. Cook until the potatoes are half cooked, then drain.
While they are still in the sieve or colander lightly toss them with plain flour or corn flour.
Carefully turn them so they don’t break up and place them in a preheated roasting tray with the fat of your choice (for me, it has to be duck fat or olive oil).
The oil should be hot before you place the potatoes in. Place the potatoes in your preheated oven at 180oC for 90 minutes approximately, turning if possible every 20 minutes.
